Even though I am a vegan, I do miss cheese, but that does not mean that I miss out on pizza - oh no indeed. Cheeseless pizzas are great. Pizza Express are very vegan friendly and will often serve their pizzas sans mozzerella if you ask - in fact, I ate a pizza there last night and very yummy it was too : )

I also make my own pizzas, cheeseless, and sometimes with soya mozzerella cheese. But tonight I just wanted a quick dinner, so I went for ‘lazy’ pizza - which essentially is like a beefed up* bruscetta.

Tonight’s version is some granary toast with some garlic paste, grilled tomatoes, soya mozzerella cheese, queen olives with herbs, black pepper, and chargrilled aubergine pesto.

It is YUMMY : )

* - I went for the meaty adjective purely for alliteration purposes : )
