Behold - red lentil, sweet potato, and coconut soup w/toasted ciabatta slices drizzled w/olive oil and topped w/tomato & olive pesto.

How to do it (serves 2 in big bowls, 3 in smaller bowls):
Soup:
1/2 litre of vegetable stock
1 diced onion
2 - 3 cloves of garlic, roughly chopped
1/2 cup red lentils
2 sweet potatoes, diced
coconut milk
chilli powder
